I love to make this healing white bean stew on cold wintery mornings, especially during flu season.
I add lots of garlic, ginger, spinach and onion all of which have great medicinal qualities. I use a spicy tomato base as this makes it all a little more fun – but please feel free to adapt it to suit your preferences. I like to think of it as a healthier version of baked beans on toast.
Things you’ll need:
6-8 organic garlic cloves, crushed and chopped
One large red onion, chopped into thin slices
One tin of chopped tomatoes

One thumb sized chunk of fresh ginger, finely chopped
3 small green chillies, finely chopped
1-2 large handfuls of organic spinach
Add all of the chopped ingredients to an oven proof pot, along with the tinned tomatos and cannellini beans.
Place in the oven, on 180 degrees for 20 minutes or so.
Voila. A spicy, delicious, warming breakfast with added healing properties.
You might like to serve your white beans with a side of bread, a sweet potato or a poached egg.
